How to define Layer Appearance for two or three color icons

from above JS icon is easy to change fill color though layer appearance layer. but V icon has two color its not chaning accordingly

I want to make icons library for my company tech icons, most of them are in single color, but few of them the tech icons has two color as show in left side artboard. How to change that icon colors (where is two color) through applying Layers appearance into Appearance panel.

Left icon has two shades while moving that shapes onto Targeted layer appearance it turn to single color, and I expecting to stick with for it with two shades.
