How to set PSD link in illustrator to overprint?

I'm currently setting up some packaging artwork in Illustrator 2020 which requires layers to be set to overprint. On one layer, I have an image of some grass which is linked as a photoshop file. This needs to be overprinted onto the layers beneath but the option to select overprint is greyed out.

 

I am able to select overprint for all of the vector elements in the file. It's only the PSD link that I am unable to select overprint for.

To apply Overprint to an image it needs to be embedded. Embedd the image and then select overprint attribute.

 

Some more ideas:
First just want to doubble check that the Illustrator file is CMYK. Even if it contains Spot Colours it needs to be CMYK for you to be able to see Separations. RGB images can overprint on spot colours, but not have Overprint on CMYK. CMYK objects can display overrint values that affect RGB images. Is the image RGB image? The blemd mode Darken will make a similar appearance as using overprint, with the difference that Overprint will take the value of the top object in each channel that is not zero (which means a traditional overprint of an image in all colours may turn lighter than what it is overprinting) Darken works a little different, but using Separations Preview, you will be able ot spot the difference.
