If everything in Illustrator 2026 (version 30) is working alright you can uninstall the 2025/v29 copy. That can be done in the Creative Cloud desktop app.
The iPad version of Adobe Illustrator should be logged into your Creative Cloud account. Any files visible within the Files section of the Creative Cloud desktop app should be visible to the iPad if it is signed into the same account.
There used to be an iPad version of the Creative Cloud desktop app. Now some of those functions are within the iPad version of Illustrator (and other Adobe apps for iPad). The iPad has a very basic file management app (it doesn't have nearly as many features as the Finder in OSX); files saved in iCloud, Google Drive, Dropbox or other locations like that can be seen there. The iPad version of Illustrator can access those locations from its File>Open command. The iPad can also open files in memory sticks or even external hard drives via a USB port dongle; the iPad may have to be connected to a power outlet when accessing files on an external hard drive.
