J ai deux versions pour illustrator : la derniere v28.. de 2024 , et la version BETA . Je peux travailler sur l une ou l'autre, comment cela se fait il ?

Are they already installed? If not install them via Creative Cloud

You launch the one you want to use and then you use it.

 

While it might work most of the time, it is not recommended to use beta versions in mission critical production work.
