Illustrator 25.2.1 - Images are now extremely saturated

Suddenly after an Illustrator 2021 upgrade(v25.2.1), which I think is when this issue occurred, all the images/artwork are now extremely saturated in every single Illustrator file. Note that the PDF file displays the correct colors/saturation (after saving a copy from Illustrator). Does anyone know how to correct this issue?

Your colour setting may have been changed to a more saturated profile.

Check the files orginal colour setting by going: Edit> Assign Profile

@Simmer1 Thank you! That adjusted all my Illustrator files. Knowing that I never altered the color settings, what would have caused this to happen?
