Illustrator (27.6.1) deletes editable PDF fields on save

As the title says, the new update seems to not be playing well with editable PDF fields. We have a customer proof form that has a dozen or so editable fields, and ever since the update whenever we save that form, the fields disappear. We have had to revert back to (27.5) for the time being. This hasn't happened in any update prior to (27.6.1), so I'm wondering if there is a solution other than re-creating the PDF fields again.

Illustrator is not a general purpose PDF editor.

I'm really surprised that this ever worked.

Sorry, I should probably clarify since the idea isn't coming across correctly.

We add artwork to the proof, and there are editable fields that are edited in Acrobat by sales for qty, etc. Those fields were created in Acrobat, but have always stayed intact when saving a new version of the proof via Illustrator. Since updating, those fields are now disappearing when we save the original copy.

I've also done this with several other forms, where the fields created in Acrobat stay intact after a save in Illustrator. I'm not sure why this update seems to have broken that.
