Illustrator all of the sudden switches to CPU preview and can't go back

Today when I opened illustrator, it randomly whiched to CPU previewing. And, yes, I've tried everything.

That does seem strange. Would you mind confirming the OS/Illustrator version installed, your computer hardware details like the CPU/GPU/Memory and if Illustrator behaves this way with all files, so we can better assist you?
