illustrator CC how to set default font

hi, i used to have a preferred default font on Mac CS6, but now in CC it goes to one of two undesired default fonts (myriad pro and a weird foreign font) and i cannot figure out how to set this. also i want the default to be a letter size. i can't get this to make a default template. help! tx!

thanks. i have tried such things, but either it doesn't find the right template or i'm not understanding. the file path is different in my computer, but i found the folder that has recent activity. i try to make arial the default but keeps going back to myriad pro, even after i put a new template into "new document profiles -> en_US" and also i never get my "recent" template to show up in "recent items", so i can't shortcut to that. any ideas? thanks!
