Most printers want CMYK so you could follow Chad's advice. You could check with your vendor to be sure that they want CMYK.

If you have raster effects, choose File > Document Setup > click Custom and set the resolution. Typically 300 ppi is used for printing, but again, you could check with your vendor.

You should also go to the Preferences dialog box (Edit menu on Windows; Illustrator menu on Mac) and choose Appearance of Black. Choose how you want black to be printed. If you have black text, choose Output all blacks accurately.

Most print vendors want a PDF file, and they may want you to include printer marks when saving the PDF.
