Illustrator crashes everytime I open it

Hello everyone. I keep having the same problem with Illustrator and Illustrator only and it's so frustrating, as I can't get in contact with support via chat.
I tried uninstalling it and installing some previous versions, but nothing seems to work: everytime it crashes at the first click and some other times it can't even open. How can I fix it?

I have MacOs 26.0.01 on MacBook Pro M4 Pro 2025 and I now installed (again) a previous Illustrator version v28.1 just to see if the latest version was the problem, but I still have the same crash everytime. I saw a post from a fellow user where it was suggested to go to Preferences and turn off GPU Performances: it worked for a few hours and now I can't use Illustrator again nor I can do anything with it, since it crashes immediately upon opening it.
