Illustrator keeps reverting to previous font

Hi,
I've been dealing with a frustrating issue for a while, and nothing seems to solve it. I've tried uninstalling and resetting the settings, but the problem persists.

When I change the font of a word in an existing document, any attempt to edit that word causes it to revert back to the original font.

For example (see photo), the word Appetizers was originally written in Futura. After changing it to Gotham, adding characters in the middle or end of the word makes it switch back to Futura.

This started happening a couple of weeks ago out of nowhere.

Please, PLEASE help me solve this!
