Illustrator minimising (midsizing) when opening more documents

When I am using 2 displays, I can open one document as normal, but once I open any futher documents, each time the program goes to a minimsed (or mid-sized) view and I have to maximise it agian.

If using one display only, this issue doesnt happen.

Why is this happening and is there a way to keep it maximised?

I am using Windows 10 pro x 64 system

This also happens to me sometimes, but i am unsure why or what will resolve it, i will also keep an eye on this post. You could add it to the bug request forum... https://illustrator.uservoice.com/ and see if anything comes of it.

This happens to me every time..

I looked up in the user voice as you suggested and found a post about it from 2018 which has not been addressed.
