I have one simple problem: Why the desk of the Illustrator is white in some of my works and why it is grey in some? The artboard is white of course,
I'd like to get a grey background and I haven't found any way to change it in some cases.

How to change it?

Some possibilities,

View > Overprint Preview gives a white background.

View > Hide Artboards gives a white background.

Thank you for your time and kind answer. Unfortunately, it remains white even I change it.
Maybe it changes on its own someday.

Some possibilities,

View > Overprint Preview gives a white background.

Hello Tom_Fredricks,

This worked. I had an Overprint preview!
In addition, I made changes in Preferences in Users Interface as Bill Silbert advised.
Thank you for both! A little thing but irritating if I do not know why something is in some way!
I think that they both together worked.

The color of the area surrounding the artboard (the Canvas) in Illustrator is controlled through the Canvas Color area of the User Interface section within Illustrator Preferences. You can make the Canvas White as shown in the screen shot or you can match the greytone of the Brightness option that you choose for the entire Illustrator interface there.
