Images glitches while moving them & randomly click off while using pen, mid line segment tool in Ai

 Hey all! For the past couple days I've been experiencing technical issues within my illustrator files. Illustrator is up to date, I'm running on the most recent iOS as well. Also I am working on a Mac. 

 

When I work on files, some of the images will disapear from the art board, coming back when I drag something across the effected area or simply continue working. It happens A LOT. Also it's been randomly clicking off of objects too. While using the pen tool, mid line segment, it acts as if I clicked a different tool altogether. I've included some screenshots of the glitching images, hopefully it comes across,

Sorry about this trouble. Could you please share a few more details like:

  • The Exact version of macOS and Illustrator
  • Is this happening while working on a specific file? If yes, could you please share the document with us? You can upload it to the Creative Cloud (https://helpx.adobe.com/in/creative-cloud/help/share.html) and share the download link.
  • When did this start happening? Are there any recent changes made to your system? For example, any antivirus, system updates, or web extensions installed recently.
  • Does turning off GPU performance from preferences (cmd + k > Performance > uncheck GPU performance) helps to resolve the issue?

Hello!

Thank you for getting back to me so quickly! I am in the process of
uploading my file to the creative cloud at the moment, but thought i'd
answer some of your questions in the meantime...

Illustrator v. 25.4.1
MacOS - 11.5.1, Macbook Pro, 15in (2016)
No recent changes, no antivirus, or extensions. I tried turning off GPU
performance, it reduced my image quality but that was it.
