Is there a way to use something like Shape Builder on strokes (without outlining)?

I’m trying to find a way to work with strokes the same way Shape Builder works with filled shapes — ideally without having to outline them.
For example, if two strokes overlap and I want to remove or merge parts of them, I can use the Scissor Tool to cut, but then I need to manually delete segments and merge anchor points, which is pretty tedious.

Is there a more efficient or intuitive way to "trim" strokes or combine them, while keeping them live and editable as strokes (not converting to outlines)?

Any tips or plugins that can help with this?
