Issue with emojis displaying correctly

I have this recurring issue of emojis not displaying correctly once after opening a saved document. This is only happening to documents that have been last saved a few weeks ago. It`s not happening to very recently created documents. For example, I used a waving hand emoji, saved the document two to three weeks ago and opened it today. The waving hand changed to a fist. All emojis in the same document have changed.
