Issue with paths on different layers deselecting when I change colors.

I'm having an issue in Illustrator 27.1.1,
When I select paths that are on different layers / groups to change the color of them all to the same color, it's deselecting some of them and only changing the color of the paths it's decided to keep selected. Sometimes it changes the color of all of my selected paths on the first color change, and then only on the second color change will it deselect randomly, and so forth. The paths are all the same stroke weight and same brush. Screen recording attached. PLEASE HELP!
