I have a pen tablet (Xp Pen Deco 01 V2) and everytime I open illustrator, there is some or the other key which on pressing, freezes my laptop (MSI Prestige 15, RAM 16GB).
I have tried disabling my GPU in performances but still it doesn't help.
Presently I have Adobe Illustrator 2021 version. What is the problem exactly and how do I solve it?

Sorry to hear about this experience. I would request you try resetting Illustrator's preferences by following the steps shared in this article (https://helpx.adobe.com/illustrator/kb/troubleshoot-preference-issues.html) and sharing your observations.
Disclaimer: Please note that resetting preferences will remove all custom settings, and Illustrator will launch with the defaults. You may take a backup of these settings from the location mentioned in the article.
