MacをGoldenGate27.0にアップグレードしたら、illustratorが開きません。

Illustrator のバージョンは何でしょう、と言っても 2021, 25.4.8 でも使えますからバージョンのせいではないでしょうね。ただし何らかの不具合があるかどうかまでは確かめていませんが。

macOS 27.0, MacBook M5 Pro です。

Golden Gate はベータ当時からテストしていますが、とりあえずは OS に依存する不具合はないようですから環境設定の初期化、Illustrator の再インストール、それでもダメなら macOS の新規インストールが必要になるかもしれません。

Currently there is no experience with that system whatsoever in this forum. If you have a Wacom, uninstall the driver, since it’s not compatible with MacOS 27. Try and reset the Illustrator preferences.

Generally it’s a very, very, very bad idea to install a system on the very day it is released. Better to wait a couple of months. And certainly wait until Adobe officially states compatibility.
