Missing options

I'm very new to illustrator& I'm trying to learn my way around. The main thing I want to do is create patterns for leather crafting. To do that I need the rulers & grids. When I click the view tab the show ruler& show grid isn't there like the help sections says it should be. I know there's keyboard shortcuts but there's way to many of those to remember..

Also when I add a shape like rectangle or rounded corner rectangle(the 2 I'll use the most) the grid disappears behind the object is there a way to keep it on top?
