Modified Date overwriting Created Date in Illustrator 2021 on macOS Big Sur

MacOS Big Sur 11.0.1 

Ai 25.0.1

 

I'm experiencing an issue where on any save, the date created is overwritten. 

I'm drawing patterns and need to keep my versions organized. 

This seems like a simply thing, but I cant find anything addressing this. 

I've re-installed, everything I could think of. . I've also been in touch with Apple and settled that this is an "adobe only issue" .

    This is the best way of communicating with the Engineering and Product Management teams regarding issues and suggestions so they can be implemented in future releases.
