My file keeps converting colors to "In Web Color" whenever I save my illustrator file.

Hi there,

I'm working with a client who has an incredibly saturated color palette. When making their social media posts in Illustrator, their color values will be correct, but then if I close the document and/or keep the doc open for a few hours, the colors become dull. Does anyone know why this is happening? This started happening after I downloaded Adobe Illustrator 2021.

My document is in RGB and here are my color settings:
