I teach Illustrator and Photoshop in a high school. As of rigth now we are going back to school 5 days a week but there is always the chance that it'll change and we'll go back to how it was in March/April/May. Our students are given chromebooks, which cannot run the Adobe software! AAHHHHH!! Any suggestions of apps that are somewhat similar until we'd get back to school fulltime?

There are other vector applications and there are other pixel applications. They do somewhat operate like Illustrator and Photoshop, but there are also major differences in the details. So e.g. in all pixel applications Gradation curves or levels work the same and in a lot of vector apps the pen tool works in the same way as in Illustrator. But when it comes to layers in a vector app, it might already be different. So basically you will be teaching a different application. The files won't be fully editable when opened in the other application ... and so on.
