Open eps downloads in illustrator

My stock vector objects are delivered and I download as eps files. The latest Windows updates have removed recognition of eps files and when I make an attempt to associate Illustrator 2023 to the eps download, I get a system notification that no app is available on my machine - the only option is to look for an app in the Windows store.

If I drag the file to illustrator it opens a raster version of the image that can't be scanned. I have used image trace to convert these to vector, sometimes OK, sometimes not. 

I'm sure there's some sort of work around, but have no idea what that may be. Since I have pre-paid stock vectors, I'd sure like a solution.
