Out of Gamut colour warning when doc is RGB & CMYK

No matter what colour profile I choose, I appear to be restrained to whatever gamut I am using for all of my Illustrator documents. This occurred with my new Illustrator 2020 install, and has not occurred before, even on this PC. It appears to affect any placed or copied images as well.

 

How do I disable the gamut restrictions?

    Your screenshot does not show the OOG warnings.

    That is what they are when working in an RGB document, a warning that the color cannot be reproduced in CMYK with your current CMYK profile from your Color Settings.

    How are your Color Settings setup?
