Paintbrush tool drawing anchor points in layer color

I am working on Illustrator 23.1 and am having trouble with the paintbrush tool. I am currently unable to paint live strokes with the brush. As a make strokes the tool creates anchor points in the same color as the layer and then once I click the selection tool the line will appear and even then I am only able to get 1 point width strokes and the basic brush out of it. Is there a way to use the paintbrush tool where I can see what I am drawing as I draw it?
