I'm trying to create this pixelated (gradient?) effect on an object, anyone has ideas on how to achieve this in the most simple way?

Start with a gradient black to white

Apply the Effect > Sketch > Graphic pen

Set the size to 1

Set the document raster effects resolution to 12 or the like

Object > Expand appearance

You know might want to crop this, because the following function has a heavy load on your computer

Object > Create Object Mosaic

Then create the tet and apply it as a clipping mask to the pattern
