This shows for Myriad Pro at least, you don't have any other font styles like bold or italic installed on your computer. So you can go to Typekit, for example, and install a full font family. Or if you are using a font system to control your fonts, they might be installed but not turned on. Go to Font Book, for example and see what is installed and what is actually turned on.

Can you please post a screenshot of the font pull down menu, and let us know if you have access to bold and italic fonts to load.

You may not have the font loaded as mentioned, or the font may be coded in a way that the italics and bold show elsewhere, or you may have a font conflict and your font cache may need to be reset.

We need more information to better advise  as we know not the name of the font, operating system and how you laid fonts and what you have loaded.

In Illustrator you can only use font styles when the particular font style has been installed in your system. You don't only need Helvetica Regular, but also Helvetica Bold, Helvetica Italic, Helvetica Bold Italic, Helvatica Light ... your get the idea.
