Resolve Missing Fonts can not be unselected

Witht he recent move to eliminating Type1/Post Script font support in Illustrator 2023 we have had to replace the default font we have been authoring in for 10+ years.  When we open legacy documents we are not getting a font replacement request/option, and when the document is open if we go to Type>Resolve Missing Fonts... the option is greyed out.  I have tried loading multiple documents with missing/unsupported fonts and can not trigger an error or location to unselect the replace fonts option.

I anyne else seeing this?

The font we are replacing is Helvetica

Illustrator 27.3.1 (64bit)

Several years ago I was consulting/transitioning companies away from Type 1 fonts. What I did was record an action of the find change type >> find/replace font, and distributed the action across each computer so the production departments could use an action to update from type 1 to Opentype. Hopefully actions still record font before and after choices as has, has been some years since I heard of anyone still using type1.

For Helvetica, I set a copy of the type 1 version for all fonts from condensed to extended, normal to bold italic. I recorded all of them upgrading to opentype into one acton. I opened up jobs from each major client to get an idea of what type 1 fonts they often used in the branding. The clients confirmed years later their computers were having less crashes, running faster and overall less problems. So the effort is worth getting away from the outdated Type 1.

I used the free web based  glyphr studio to create Opentype versions of obscure type 1 fonts.

Thanks for the reply.  Moving away from and replacing our Type 1 fonts isn't our issue, and we have plans and processes in place to do this.  The issue we are having is that Illustrator is default replacing them for us with Swiss, and not prompting or allowing us a choice in the matter.  We are unable to turn off the option to resolve the missing fonts.  The decision was made to move to Arial (not agreed that this is best but beside the point), so we would prefer the option to auto replace or choose to replace with Arial, rather than having to run additional processes and QA checks to replace Swiss with Arial.

My main question is if anyone else is seeing this option where they can not unlesect the optio to automatically replace fonts, and does anyone have a solution of choosing which font to use for replacement.
