Saving a Illustrator JPEG as 300 dpi, do I need to change the document pixel size too?

I have been changing my pixel size in document set up to be for 300dpi- and when I am exporting my JPEGS as 300 dpi, it says the resolution needs to be lowered. Can I have a normal 8x10 document size and still save a JPEG as 300 dpi ? Will the quality still be good? Do I still have to do both (document size, and save as 300 dpi)

What do you want to get finally? Printable image 8x10 in? In this case you have to set the artboard size 8x10 in and export with 300 ppi.

(pay attention, dpi - dots per inch - is not equal to ppi - pixels per inch). Do you mean 300 ppi for press bureau?

yes, the quality will be fine. Use the highest level of JPG quality.
