Software developed for almost 4 decades is unable to set default font

This is just absurd. There is absolutely no way to set a default font size/type in Illustrator.
I've tried the workarounds with document templates, wasted 20 minutes, does not work.

Each time I'm opening a new document its always tiny 12pt Myriad!!!

How come Adobe is introducing AI features into the app, while FOR ALMOST 4 DECADES this app is unable to handle such a basic and obvious task!

You can set a default font by editing the 'Normal Paragraph Style' in existing document profiles or creating your own:

That is an incredibly tedious and convoluted way of dealing with a very simple and basic thing. I've tried it and it just does not work after restarting Illustrator, its Myriad 12 pt. Every. Single. Time.

Even if it works - what happens when you update the app? Preference settings can be migrated, do these settings also move to the new version? Or do you have to repeat all these steps again? Madness.
