Strange behavior with Stroke Alignment

For awhile now, Illustrator has been automatically changing the stroke alignment on objects and I'm not sure why. It doesn't happen all the time either. I initally noticed it when I would draw a new path or shape. Sometimes the stroke is set to "Inside." Sometimes its set to "Center," which I would say is the norm, since thats what it has always gone to by default since I started using CS5.

 

I use contour cut lines everyday at work, and if the stroke isn't set to center on the path, it can cause issues. Of course we can just double check the strokes, but that can be time consuming when working with deadlines, etc, and I'd rather find a solution so I can have the alignment set to center every time. Any help is appreciated!

 

Illustrator Version: 27.6.1 (has been happening for about 4-5 months on older versions also)

Windows 10 on PC

    It depends on whether you set up a web design or a print document.

    Web design documents are set to snap to pixels and have inside strokes as a default for that reason.
