Switch to greyscale, but dont lose any color info, and switch back to color later for Illustrator?

I want to apply colors to my artwork, convert to greyscale to check the values and then convert back to same colors again with a simple button/keyboard shortcut. Similar to pressing ctrl+y to view Outlines. Is there a shortcut for this?

Today, after I have converted the colors to greyscale, I press "undo" which feels a bit weird.

Hi,

If that's just a display need, You could use Proof color:

1. From the View menu choose "Proof setup > Customize > Dot gain

2. Turn off and turn on Proof colors

3. If you need, you could assign a shortcut by Edit menu > Keyboard shortcuts

One problem occurred:

When I close Illustrator and opens it again, the custom Proof Color needs to be selected again (then the shortcut works again). Is there a way to save this setting so it's always there once Illustrator is started?

Do correct me if I'm wrong here: dot gain seems to be for printing and if my artwork will be used in an online video, sGrey is a better option. I personally don't see any difference, yet I thought it would be good to talk about it for future people reading this thread.
