Symbol editing color yellow.

I am in version 28.3 of Illustrator.  Just downloaded it and my symbols are yellow in the editing mode.  I have gone to the layers panel and changed the color and saved but it reverts back to yellow every time.  I dowloaded an earlier version of Illustrator 27.9 but the problem is the same.  Very difficult to see the symbol in yellow for editing.
