My problem is to open a pdf and that it contains text that is updated (at the time of opening), according to the variable file that is automatically modified from our external database.
I have not been able to find a practical solution for this problem ! thank you

Thanks Tom, but I still think it's possible, even if it's updating the variables via actions. It would open, activate the action of updating variables, load new data and save.

But then you are probably talking about updating an Illustrator file and saving as PDF.

If what I am looking for is to have an illustrator file, with dynamic text and that can be "Linked" to an xml file that our database generates, starting from these, generate an updated pdf according to the new data.

That sounds like some kind of system that Illustrator is not involved with. Updating a pdf with text from a database is not something you can do with Illustrator.
