Toolbars and Workspaces vanished after recent updates

I recently updated Illustrator and Illustrator Beta and my saved workspaces have disappeared. I also used to have a toolbar along the top of the screen (In addition to the right and left toolbars/windows) that was really helpful and it has vanished - I can't find out how to get it back. Was wondering if anyone else was experiencing this as well? I've had to re-build all my toolbars and windows and re-save my workspace which is super frustrating.

Illustrator betas for whatever reason appear to always instal with fresh preferences. I guess because it may help with troubleshooting.

 

For the release version, did you choose to replace or retain existing versions and settings? I.e. is your previous version of Illustrator still installed?

It must have replaced the existing version and settings by default as I don't recall selecting either option. Would this option be in the settings? It has happened on both illustrator beta and the regular version of illustrator. I've opened both v. 27.9 and v28.0 and my saved workspaces have vanished completely from all. It's never happened before with any previous updates until now 😞

You see the options in the CC app when updating:

The thing across the screen is the control panel.

Just select it from the Window menu.

 

Or turn on the Essentials Classic workspce.
