Transparent strokes around objects

I am working on a shirt design for the fair board. I have circled the areas that I want to put in transparent strokes on. I attempted to use the appearance menu and click on stroke then take the opacity down to 0% (as noted in a previous thread from 2019) but it completely got rid of my strokes when I did that.

I actually taught my students today how to create invisible lines.  The reason being they are using Live Paint to fill in areas, but in some illustrations of characters, the line of the eye does not always connect, yet when the eye is colored it is white and does not bleed.  So this is my suggestion.

 

What I suggest trying.

You have a shape (let's say a square) it has a fill and stroke.

The Fill is Pink and the Stroke is Blue.... now we will remove the blue stroke later.

Duplicate that shape.

On the Duplicated shape, remove the fill color.  So the inside is clear.  You still have the blue stroke. 

Ok on that shape go to Object then Expand.

This will turn that Blue Stroke into a shape.  Now go to your fill color and make it invisible.

You now have an invisible shape where the stroke was.

 

Ok got back to your original shape and remove the blue stroke. Only keeping the fill color.

 

Now put but the original shape and duplicated shape into the same layer/group.

You now have an invisible shape that surrounds the visible shape.

 

If that does not make sense let me know and I will record something if I have time.

I don't know what previous thread you are talking about and I personally am not having a problem when I try to replicate your issue, but as @Kurt Gold seems to be familiar with this problem, can you let us know more about the version of Illustrator and OS you are using.

It is just a guess, and I do not know which version of Illustrator you are using, but I can imagine that you are tormented by a bug that was introduced in one of the latest versions of Illustrator (in conjunction with global or spot colour swatches).
