Trouble using "knockout" features

I have tried for the last 2 hours to try and get the holes in a custom letter B to be "knocked out" all the way through the red body of the B so that the background (artboard) of the project shows through the B. EVERY time I do it, it only shows me the red color of the body of the B so every time I export it to use on shirts I have the change the color of the holes of the B to match EXACTLY. Please help me. I feel like this used to be FAR easier in previous versions but maybe I'm just getting old.

Knockout groups are for transparency interactions in groups or appearance stacks. All you need here is a compound path. Select the 'B' outline and the counters and press Ctrl + 8.

THANK YOU SO MUCH! I searched for on obscene amount of time to no avail. I still dont understand what the difference is or what ctrl+8 actually does, but it 100% fixed my issue. You are the best.

I finally found an teeny tiny menu symbol in the opacity options that allowed me to check "Page Knockout Group"... it did absolutely nothing checked or unchecked. WHY DOESNT THIS WORK?!
