What format is the "old cover" where you can't directly access the text? Is it in a placed graphic? image file? PDF object?

If a PDF object, you can open a copy of the file in Acrobat and simply delete the old text if it is a separate object, then replace the linked file with the new copy.

It looks as if the one colour of the gradient was also (accidentally) assigned as a stroke colour.

If you are unsure, make everything in your document invisible - except the rectangle in question. Select it and open the Appearance Panel. Show a screenshot (with document, selected rectangle, Layers Panel and Appearance Panel)

What is he cource for the cover? Is it a file or a scanned document? If a file, what format? As for the line, check that there is no stroke applied to the frame with the gradient.
