How to keep from changing the font while typing a message

I'm sorry to hear about your experience. Our product team is aware of the problem and has tried fixing it in the latest release of Illustrator (beta). Would you mind installing it, as Ton suggested, to check if it helps?
Alternatively, try disabling Missing Glyph Protection option in Preferences > Type and share your observations.
