Was attempting to add texture to the text in the middle artboard then the whole program glitched and now everything is black and white outlines. I tried restarting my whole sytem but made no difference...

You are in Outline mode. Try View > Preview

You might have accidently hit the shortcut for the outline mode. Once there it doesn't go back even on a restart, you need to get out of it under the View Menu.
