Batch image processor changes 'date taken' info when converting from HEIC to JPG

When I use the Image Processor to batch convert my iPhones HEIC files to JPEG - the "Date Taken" information is changed to 1/08/2022 for every single photo - no matter what time or date I process them...
I really want to keep the "Date Taken" infomation as this is obviously really important.
Note - I'm not talking about "Date Created", but indeed the "Date Taken" information of the photo.
How can I rectify?
1. I'm using the latest version of Photoshop 24.0.0 Release
2. Windows 11 Laptop
3. Scripts - Image Processor - Select Folder (of HEIC files on harddrive) - File Type Save As JPEG.
4. I'd expect the "Date Taken" information not to be altered during the conversion, or at the very least to be the current date and time as if it were "Date Created".
Every file converted will contain the date 1/08/2022 in the "Date Taken" field - this is true no matter what date or time I do the conversion, it's the same date every time - 1/08/2022.
This makes the batch conversion useless to me as I merge mine and my partners photos into folders and thus use the "Date Taken" field to sort into order and then re-name. I have done this successfully previously multiple times. Not sure what has happened.
