Can't apply a pantone color

Question

I'm trying to change a color of a specific text applying a pantone color, however after I clicked ok and click to check if the color was changed, the previous color is displayed instead of that pantone I picked before. I mean: the pantone color I tried to apply wasn't applied.

Have you ever seen that issue? Any idea about what it could be?

Without knowing anything about your document nobody can tell you much. The obvious question would be whether you are actually using a multichannel or CMYK document that could retain the pantone or convert it to CMYK and even then it's another question which specific Pantone you use. You have to provide a lot more info.
