Change default printer settings

I have Photoshop CS 5.1 and an Epson R3000 photo printer. After every photo is printed, the print settings revert to defaults which I do not want, for example, 8 1/2 X 11 inch plain paper. How do I change the default settings, and how do I get them to remain after each photo is printed?

I think I solved this problem. It was an issue with the printer driver settings, not anything with Photoshop
