Question

color blend mode paints gray using skin tones

My color blend mode is not working. But there are other issues too.

Painting skin tones in red/orange in my version 23.0.2 paints gray when in color blend mode.  Other colors paint unexpected colors.

This was a problem two years ago.  Legacy compositing was the workaround, but now that is unavailable.

This happens in sRGB and Prophoto 16bit.

When I took a screenshot to attach to this post, it pasted into a new document as oversaturated and bright!

What's going on?  It pastes with the correct colors into a MS Word file!!!

Please fix this ASAP

"Legacy compositing was the workaround, but now that is unavailable"

It sounds like you have may a GPU issue - can you go to Preferences > Technology Previews and check "Deactivate Native Canvas" then click OK and close & restart Photoshop.
