Fish eye grid.

So I've been trying to get a fisheye grid in photoshop by following the instructions in this video: https://www.youtube.com/watch?v=upxBGNcryRs&t=487s

starts 8 minutes in.

 

But to put it simply I can't manipulate the elipses the same way they do, when I try to change height of the elipse copies the width also changes

I tried changing the height of the copies and then changing the width to fit the first elipse but when I change the width the height of the elipse copies so they again become an identical copy to the first.

Any ideas?

Try holding the Alt key when you drag the anchor point

So by using the alt key, or option rather since I'm on mac I still come across the same issue. When I hold the command key, which I believe is the windows key, it let's me change the height of the elipse without affecting the width, however the effect only occurs on one side of the elipse and isn't automatically mirrored to both top and bottom of the elipse as shown in the video.

Are you on the most recent version of Photoshop if so enable this option in preferenecs, then you should be able to use the option key
