Help needed using 'Camera Raw Filter' to make a white background in a product photo

I have a number of product photos that I need to photoshop before uploading them to my website.
The photos are taken with an apple iphone in a light box. The photo dimensions are 3024x4032.
I need to resize each image to 800x800 pixels and make the background of each photo white, without altering the colour of the image.
I've done this by going to 'Image' 'Canvas size' and make both sizes 4032. Then I go to 'Filters' and 'Camera Raw Filter' and I increase 'highlights' to 100% and increase 'whites' to 100% until the background is white. I then go back to 'Image' and 'Image Size' and change both to 800x800 pixels. I then save the image as a jpeg file.
This works well in most cases but when there's a light colour in the image it can lighten the image too much. Is there a way to stop this happening? I've attached a few example images
