Help With Current Pen Tool/Pathing Behavior

Hi all,
First post here on the help forums, so I apologize if this is a novice-level question. My question is in regards to the pen tool and its behavior when completing paths. For removing/clipping subjects from the backgrounds of images, I mainly use to pen tool to get the most control over what is and isn't selected. As an example, many of my projects include removing the background from between the gaps in the subject's hair. Naturally there's usually a few dozen of these gaps I need to zoom into and create a path for when I eventually do a 'Path to Selection' and then clear. On older versions of photoshop, I could create each of these smaller paths (All part of one overall path in the paths tab) individually, and when I completed the path of the final gap (By mousing over the first point and clicking when I see the 'o' icon) the nodes would all disappear and I could see the lines of each of the paths I created. I could then do path to selection, etc. On the latest photoshop I've moved to, I now find when I complete the final path section, the nodes remain and I need to hit 'Enter' which then closes all the path lines, and I need to click on the paths tab and manually click the path I just created, and then do path to selection. Otherwise, if I do path to selection, it just makes a selection of the last pathing section I created. Is there a way to revert back to the original behavior or do I need to navigate to the pathing tab every time I want to do a path to selection?
I included a basic screenshot below as well. Upper path is complete with no nodes showing. Bottom one is also completed, but the nodes are still showing and they won't go away until I press enter, then reselect both of them in the paths tab on the right.
