Making a path with editable thickness ?

Hi. I am looking for a tool in PS that  allows me to create with the pen tool an editable way to change thickness and color. In the same way that shape tools work. If you make a circle or a line...for example you can change several properties of those shapes. When I use the pen the only option I find is to create a stroke from it, which is not the same since is not editable.

It sounds like Illustrator may be more suited to your purpose

    You can use a brush to stroke a path and that would allow you to set the attributes of the brush like the thickness and the color. Draw your path with the Pen tool, then while the path is selected, switch to the Brush tool. Pick a brush and a color and in the Paths panel, click the 2nd icon at the bottom of the panel (Stroke Path with Brush).
