Check Rubber Band in the Options bar (see screenshot below) to see next anchor curve preview as you drawing.

In the tool bar, use a tool called " Freeform pen tool" 

then convert path to selection

IMO the freeform  pen tool would not be good pen tool for controlling curved line segments while making a selection. The Content Aware Tracing pen may be useful.   I tend to use the normal Pen tool and the curvature pen tool.  I removed the freeform pen tool from my toolbar.

There already is one: the Pen tool. There's a button in the Paths panel to turn the path into a selection.

Why not use the pen tool set to "path" then make a vector mask from that path?

There are many tutorials one the web on how to use the pen tools. Its not hard but it does require some learning and partice. Photoshop Pen Tool Tutorials
